Cook the mixture to 300ºF, which should take about 5–10 minutes depending on the strength of your stove, then remove the pan from the heat. Whisk in the baking soda for about 5 seconds, and once it has stopped foaming up, immediately pour the mixture onto the parchment paper. Let cool for 1 hour until hardened, then whack the honeycomb with a knife to break into pieces. Regional names aside, there is a slight difference between sponge candy and honeycomb candy. Both are technically a type of toffee made with brown sugar, corn syrup, and baking soda.

Dip base of pan into a bowl of cold water for 2 seconds, to prevent overcooking, then whisk in bicarb. When caramel bubbles and rises, pour immediately onto prepared tray. But each uses a different type of acid to create their individually unique bubbles. Heat the oven to 120C/fan 100C/gas 1. Line a deep 20cm square tin with baking paper and put the sugar and golden syrup into a large pan with 2 tbsp water. You want to make sure that the soda is evenly distributed, but you do not want to deflate any of the bubbles that the soda creates. Let the mixture cool for about an hour. As quickly as you can, remove from the heat, add the bicarb and beat with a wooden spoon until it’s all absorbed and the mixture is foaming. Immediately scrape into the tin, but be careful, as the mixture will be very hot. Honeycomb most likely originated in Europe in the early 20th century, made famous by the Cadbury Crunchie, a chocolate-covered honeycomb candy bar, in the late 1920s. Work quickly when whisking in the baking soda and cream of tartar.
For example, I’ve since made my own floating candles with citronella as well as candles with flowers pressed in. Another thing to note is that if you’d like to add color to your candles, you can do so by adding a crayon in with the wax when melting. These would make great gift ideas as well.
